Low Carb Coconut Waffles

I love waffles. Especially the smell of freshly baked hearts makes my mouth watering... These are made with coconut flour which is naturally sweet and don't require any sweeteners. Perfect for those cosy nights in! Coconut flour can be purchased at most world food markets (I usually get it from Carl Berner in Oslo) and is not as expensive as almond flour.




Ingredients: 
About 1-2 dl coconut flour (until the mix reaches the right texture)
4 eggs
50 gram butter
2 tsp psyllium seed husks
1 pinch of salt
1 tsp baking soda
1 dl cream
1/2 dl milk

Melt the butter and whisk the eggs. Add the the butter and the rest of the ingredients to the egg mixture and blend well in a mixer or by hand. The batter should be fairly thick and spongy. Let set for 15 minutes before baking in a waffle iron.

You can serve the waffles with your favorite spread. I prefer sour cream and home made raspberry jam or whipped cream and cinnamon.
